Mary's Rhubarb Crunch

  • 5-6 C Rhubarb cut in 1" pieces (1# of rhubarb typically yields 3 to 4 cups)
  • 4 Tbsp Flour
  • 4 Eggs
  • 2 C Sugar (use less if using a different fruit that is sweeter than rhubarb)
  • Beat eggs. Mix with rhubarb, flour and sugar. Place ingredients in a buttered 9" x 13" baking pan.

    TOPPING

  • 1 ½ C Brown Sugar
  • 2 C Flour
  • 1 C Butter (softened)
  • Mix together until it crumbles. Place on top of rhubarb mixture.

    Bake in a preheated 350 degree oven for 45 minutes or until brown. Serve warm with ice cream or whipped cream.
