Do you have In between Fruit Blahs? IBFB is when you have to wait for temperatures to warm up before the summer crop of fruit comes in. Peapod grocer Tony Stallone always suffers from it this time of year. But he also knows the cure. He shares some recipes that use produce that is season no matter what the weather.
- 1 Papaya cleaned and cut into 1/4" cubes
- 1 Jalapeno seeded and diced
- 1/4t Ginger minced
- 1T Red pepper chopped finely
- 1/2T Onion Diced finely
- 1T Cilantro
Combine all ingredients in a large bowl , mix well let ingredients blend before serving. I love it served alongside Halibut, Shrimp or Scallops!
Sautéed Broccolini with Garlic
- 1# Broccolini washed and ends trimmed
- 3C Water
- 1T Kosher Salt
- 2T Extra Virgin Olive Oil
- 2cloves Garlic minced or crushed
- 1T Fresh squeezed lemon
- Salt and Pepper to taste
In a large pan or pot bring water and salt to boil , add Broccolini and cook 3 to 5 minutes until just tender, drain and rinse in cold water immediately. Return pan to burner on med low heat, add oil and garlic and cook until garlic just turns golden immediately add broccolini back and sauté 2 to 3 minutes, remove splash with lemon juice and salt and pepper to taste. I love it served alongside fish.
