"Mocktails" for New Year's Celebrations

The countdown to 2009 is on. To help you celebrate, mixologist Ben Newby from The Underground shares some non-alcoholic recipes sure to be a hit at any party or family gathering. High Energy Holidays

1.5 oz Fresh Espresso (chilled)
1.5 oz of cream/milk
1oz Chocolate Sauce
One tsp of cane sugar
3 drops of Madagascan vanilla/vanilla essence
Garnish: Sprinkle of grated dark chocolate
Glass: Martini or 12oz Rocks

Method:

1. Chill the fresh espresso
2. Add ice to a Boston Shaker
3. Add all ingredients over the ice
4. Shake vigorously
5. Strain into either a martini glass or a 12oz Rocks
6. To garnish sprinkle grated dark chocolate on top of drink

Healthy Ho Ho

1 oz of honey
½ lemon freshly squeezed
½ Lime fresh squeezed
½ Orange freshly squeezed
1.5 oz Pineapple Juice
1 oz Orange Juice
Garnish: Orange Burn Garnish or lime Wedge
Glass: 12 oz Rocks

Method:

1. Build in a shaker over ice
2. Add all ingredients in the order above
3. Shake vigorously
4. Stain over ice in a 12oz Rocks
5. Garnish with orange burn or lime wedge

Berry Merry Xmas

3 x Raspberries
5 x Blueberries
3 x Blackberries
½ Lime freshly squeezed
2.5 oz Pomegranate Juice
2 oz Cranberry Juice
Garnish: A blueberry, blackberry and raspberry on a pick
Glass: Chilled Martini

Method:

1. Chill Martini Glass with ice and cold water
2. Add berries and lime juice to the shaker
3. Muddle the berries until pulpy
4. Add the pomegranate juice and cranberry juice to shaker
5. Add ice and shake gently until chilled
6. Remove ice and water from martini glass
7. Strain mix into glass and garnish with berry pick
