Prime Sirloin Burger

INGREDIENTS for 1 Order

  • Ground Prime Sirloin 75/25 7 oz. (wt.)
  • Salt & Pepper blend 2 tsp.
  • Kaiser roll1 ea.
  • Butter, lightly salted 1 Tbsp.
  • Mayonnaise 1 Tbsp.
  • Bibb lettuce leaf 2 ea.
  • 4 x 4 Tomato sliced 1/4" thick1 ea.
  • Red onion rings 1/4" thick 3 ea.
  • Cole slaw 2 oz. (wt.)
  • Bacon, seasoned (recipe below) 2 ea.
  • PREPARATION INSTRUCTIONS

    Pack the ground beef in your hands for 30 seconds then press into a patty that is 1/2" thick x 4" wide. Season the meat with salt & pepper mix and cook on the flat top of broiler to the desired temperature. Spread room temperature butter on the top & bottom of a Kaiser roll and place on the top front of the broiler and toast. Spread the mayonnaise on the bottom half of the bun. Set the cooked burger on the bun then set on the right side of a 10" room temperature plate.

    Seasoned Bacon

    INGREDIENTS Quantity for 40 each

  • Ahi Spice1 Tbsp.
  • Sugar.5 Tbsp.
  • Bacon10 ea.
  • PREPARATION Combine the ahi spice and sugar in a mixing bowl and mix well. Lay the bacon on a paper lined sheet pan and sprinkle 1/4 tsp. on top of each piece. Bake in a 350° double convection oven set on high fan for 8-10 minutes until crisp. Place on paper towels to absorb any excess fat.
