Serves 4
2 1/2 pounds rotisserie chicken, skin removed, meat peeled from bone and roughly chopped (yields 3 to 31/2 cups chopped chicken meat)
2 oranges, peeled and sectioned, pith removed
1 tablespoon finely chopped red onion
1 tablespoon olive oil
1 tablespoon sherry vinegar
1/8 teaspoon salt
Black pepper to taste
4 cups romaine, chopped
1/4 cup pistachios, toasted and roughly
chopped (see page 346)
1. Combine the chicken, oranges, onion, oil, vinegar, salt, and pepper in a large bowl. Set
aside for 5 to 10 minutes.
2. Add the greens and pistachios and toss gently.
3. Divide among 4 plates and serve.
