Roasted Rockfish with Clementines

Serves 4

  • 1 pound rockfish, cut into 4 pieces, about
  • 4 ounces each
  • 4 clementines, zested, peeled, and broken into individual sections
  • 1 tablespoon olive oil
  • Vegetable oil cooking spray
  • 1 cup chopped green onions (scallions)
  • 1/8 teaspoon salt
  • 1. Rub the fish with the clementine zest. In a medium bowl, toss the clementine sections with oil.

    2. Heat a large heavy bottomed skillet over medium heat.

    3. Coat the skillet with cooking spray. Add the green onions and cook for 3 minutes, stirring often. Add the fish skin side down and cook until the skin is browned, about 3 minutes. Flip the fish, add the clementines, and cook for about 2 more minutes, until the fish just begins to flake but the center is still translucent. The fish will continue to cook even after it is removed from the pan.

    4. Season the fish with salt and garnish with clementines and green onions.
