Cracked Wheat with Golden Raisins and Pumpkinseeds

Serves 4

  • 1 cup cracked wheat
  • 1/4 cup golden raisins
  • 1/4 cup hulled pumpkinseeds
  • 1 tablespoon olive oil
  • 2 tablespoons finely chopped green onions (scallions)
  • 1/8 teaspoon salt
  • Black pepper to taste
  • 1. Place the cracked wheat and raisins in a medium-sized pot and cover with water. Bring to a boil and drain immediately.

    2. Place the cracked wheat in a bowl, toss with the pumpkinseeds, oil, onions, salt, and pepper, and serve.
