Date Cake with Apples and Smoked Butterscotch

Pastry chef Meg Galus of Tru shares a recipe. Ingredients:
  • 1 ½ cups Medjool dates, roughly chopped
  • ½ cup banana, slightly mashed
  • 1 cup water
  • ¼ tsp baking soda
  • 1 cup brown sugar
  • 6 ounces softened butter
  • 3 eggs
  • 2 tsp vanilla extract
  • 1 ¾ cup all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
Combine dates, bananas, and water in a saucepan. Boil for 5 minutes, stirring constantly. Remove from heat and cool to room temp. Add baking soda. Make sure the remaining ingredients are room temp. Cream the butter and sugar. Add eggs one at a time, then add vanilla. Add date-banana mixture. Sift the dry ingredients together. Add to the rest of the mixture until just combined. Butter a cake pan, fill about 3/4 of the way up, and bake at 350 degrees until dry to the touch. Soak with smoked butterscotch sauce while warm.
