Smoked Butterscotch Sauce

Ingredients:
  • 1 cup brown sugar
  • 3 tbs corn syrup
  • 1 tbs butter
  • ½ cup cream
  • 1 tsp vanilla extract
  • ¾ tsp bourbon (Buffalo Trace or Old Rip Van Winkle)
  • applewood chips
Cook the brown sugar, corn syrup, and butter to 280F using a candy thermometer. Take off the heat and add cream, vanilla, and bourbon. Line a large pot with foil and place applewood chips at the bottom. Turn on high heat to get the chips smoking, then turn off. Place the butterscotch in a heat-safe container inside the smoking pot and cover with foil. Stir every 10 minutes - taste for smokiness and remove when flavor is to your liking. If butterscotch has thickened while smoking, add a little cream to loosen it. Keep warm for use.
