Yuca Frita

When Dora the Explorer travels around the United States and other countries, part of the fun is learning about local food and sharing meals with her friends. Ingredients:
1 ½ - 2 lbs. yucca (cassava root)
Water for boiling
Small bowl vegetable oil for dipping
1 tsp. salt

Step 1
Peel the skin from the yucca, and cut into the shape of big French fries. Avoid the stringy center. Let the kids rinse the yucca.

Step 2
Bring a large pot of water to boil and add the salt and the yucca. (Parents should do this part). Boil for 15-20 minute or until the ycca is tender. Drain and spread the yucca on a clean towel. Let dry for 10-15 minutes.

Step 3
When the yucca is cool, show kids how to dip the fires in a little oil and put them on a cookie sheet.

Step 4
Bake the fries in a 400 degree oven for 15-20 minutes or until browned. Stir the yucca halfway through cooking time

Step 5
Help kids sprinkle the yucca with the salt. Add a sprinkle of paprika if you want.
