§ Baked potato (1 per person)
§ Can of black beans, drained and rinsed
§ 2% milk Jewel shredded cheese
§ Wild Harvest salsa
§ Jalapenos, if desired
§ Fresh cilantro, if desired
Wash potato so skin can be eaten.
Poke potato with fork and microwave until cooked.
Place potato on microwave safe plate, and cut open, fluffing inside with fork.
Fill potato with black beans and cheese. Microwave until cheese melts and beans are heated.
Top with salsa and optional jalapeno peppers and fresh cilantro, if desired. Serve with mixed cut fruit (frozen or canned in juice would be fine)
