Oven-Roasted Sweet Potato Fries with Blue Cheese Dipping Sauce

Ingredients:

  • 4 Medium sized sweet potatoes; peeled and cut into ¼ x ¼ x 2 inch sticks
  • 3 Tablespoons olive oil
  • 1 Teaspoon salt
  • ½ Teaspoon paprika
  • ¼ Teaspoon black pepper
  • Non-stick cooking spray
  • Sea salt (optional)
  • Directions:

    1. Preheat oven to 425 degrees
    2. Line rimmed baking sheet with aluminum foil and spray with non-stick cooking spray
    3. Place sweet potatoes on sheet in one layer. Be sure that there is space between them to ensure proper browning
    4. Place in oven for 20-25 minutes until cooked through and starting to brown. Turn every 10 minutes
    5. Remove from oven, sprinkle with sea salt if desired and serve immediately

    Blue Cheese Dipping Sauce

    Ingredients:

  • ½ Cup sour cream
  • 2/3 Cup crumbled blue cheese
  • ¼ Cup, plus 2 tablespoons heavy whipping cream
  • ¼ Cup finely sliced green onions
  • ¼ Teaspoon garlic salt
  • 1/8 Teaspoon onion powder
  • Salt
  • White pepper
  • Directions:

    1. In medium bowl combine all ingredients
    2. Season to taste with salt and pepper
    3. To thin the dip, add more cream
