Honey Ale Pulled Pork with Orange BBQ Sauce

Blue Moon Honey MoonPork:
  • 1 lb. Yellow onion, medium dice
  • 3 Jalapenos, seeded and diced
  • 10 Garlic Cloves, chopped
  • 5lbs. pork loin
  • 6 bottles Honeymoon Summer Ale
  • 4 cups chicken broth
  • BBQ Sauce:
  • 5 cups Orange marmalade
  • 1 cup Cider Vinegar
  • 2 cloves garlic
  • 1 cup chili sauce
  • 1 cup onion, medium diced
  • 1 cup reserved pork stock
  • To make the pork in a deep sided roasting pan or rondeau, sear the pork loin until brown on all sides, and set aside. Then sauté the jalapenos, garlic, and onion until caramelized and deglaze with honeymoon summer ale and reduce by 1/2 and then add the pork loin, and chicken broth. Place into a 220 degree oven for 2 hours. When the pork is fork tender, remove from liquid and shredded. Reserved 1 cup degreased cooking liquid for bbq sauce.

    To make the BBQ sauce, caramelize the garlic and onion, then add the reserved pork stock and reduce by 1/2. Then add remaining ingredients and simmer for 30 min or until desired thickness.
