Shortrib Meatball Sliders

Recipe for shortrib meatball sliders 24 2 oz. Burgers

Braised Shortribs, Finely Chopped 4 ea
Wagyu Ground Beef 2lb.
Eggs 4 ea
Fine Breadcrumbs 1.5cups
Onion, finely minced 1 ea
Garlic cloves, finely minced 6 ea
Olive Oil ½ cup
Chopped Parsley 1T
Chopped Thyme 1T
Minced Red Pepper Flakes 2t
Salt and Black Pepper

1. Sweat onions and garlic in olive oil until soft, no color, cool.

2. Combine shortribs, ground beef and onion garlic mixture with eggs and breadcrumbs. Add all other ingredients and make a patty to test for seasoning.

3. Roll into 2 oz. Balls and slightly flatten the balls.

4. Brown in a large pot in olive oil. After browning remove excess fat and cover in 2/3 veal stock and 1/3 chicken stock. Cover and braise on the stove top, covered for 1.5 hours
