Sloppy Joey w/ Homemade Cornbread

2 - kosher or all natural chicken breasts
2 - garlic cloves
1 - medium white onion
1 - red bell pepper
1 - poblano pepper
1 cup - favorite BBQ sauce
1 cup - favorite tomato soup
1 cup - favorite chicken broth
¼ cup - pure canola oil
Salt & Pepper ? to taste

Preparation

- Grind chicken breasts in KitchenAid (or other grinder), or purchase already ground

- Mince garlic; dice onion, red bell pepper and poblano pepper

- In a large sauté pan add oil and heat up 2 minutes

- Brown and season chicken 3-5 minutes

- Add onion & garlic, season a bit more, and brown 2 more minutes

- Add BBQ/tomato/soup/broth; mix and simmer 15 minutes

- Add peppers and simmer 5 more minutes

- Adjust seasoning and serve over my homemade cornbread recipe
