Smoked Sausage PoBoy with Mike's Diablo Slaw

September 7, 2009 4 Smoked Sausages or any sausage you may like(bratwurst, Italian, Hot Link etc.)
4 Hoagie Rolls of your choice

1 small head of green cabbage cored and shredded thin
1 small head of red Cabbage cored and shredded thin
2 medium red onions julienne\
1 English style cucumber, seeded and slice in rounds
1 grilled red pepper seeded and Julienne
1 grilled yellow pepper seeded and Julienne
3 Grilled jalapeno peppers slices in rounds (I like it hot I leave the seeds in)
11/4 cups grated manchego cheese
1-¼ cups grated asiago cheese
¾ cup mayonnaise
¾ cup buttermilk ranch dressing
¼ cup sweet baby rays barbecue sauce
¼ cup apple cider vinegar
3 tbl Cajun seasoning
¼ cup cilantro leaves roughly chopped.

In a large mixing bowl, Place all ingredients in a large bowl and combine. Season slaw with kosher salt and freshly ground black pepper to taste.

Preheat grill to a medium high heat.
Grill sausage until hot.
Place sausage in hoagie roll and top with Diablo Slaw and enjoy.

We use a sausage made for us by Randy Reams at the Elburn Meat Market in Elburn Illinois. I Love this sausage topped with this spicy slaw!!
