Mix all together:
1 stick butter,softened
1/2 t salt
1 cup quick oatmeal
1/2 t vanilla
1 Cup sugar
1/4 t baking powder
1 egg
3 T flour
Preheat oven to 350. Line cookie sheet with foil. Drop 1/4 to 1/2 t of dough on cookie sheet, 2-3 inches apart as cookie will spread.Bake 5-10 mins. Remove from oven and and place foil on cookie sheet to cool. Peel off foil.
Enjoy these alone or serve with a bowl of ice cream for a nice dessert! Light and tasty!
