Best in Dough submission: Peppermint Potato Chip Cookies

ABC7 Chicago is happy to announce the 'Best in Dough' holiday cookie contest is back this year.This Christmas treat is a family favorite!

Recipe: Peppermint Potato Chip Cookies

1 cup of granulated sugar
2 cups of all purpose flour
1 cup of brown sugar
1 cup of rolled oats uncooked
1 cup of vegetable shortening
1 teas. of baking powder
2 eggs
1 teas. of baking soda
2 teas. of vanilla flavoring
1/2 cup of crushed peppermint
1/2 cup of crushed potato chips candy.

Heat oven to 350

Mix in a large bowl, sugars, shortening, eggs and vanilla. Beat until light and fluffy. Add flour, oats, potato chips, baking powder and baking soda. Beat on low until a soft dough forms. Then stir in peppermints. Drop dough the size of a quarter about 2in. apart. Bake for 13 to 16 mins. Or until golden brown. Cool for about 2-4 mins. before removing from cookie sheets. Makes about 2 dozen cookies.
