Peppermint-Chocolate Chip Cookies

December 15, 2009 Baking mistake turned into a delightful surprise!

Recipe:

1 1/2 cups butter
3 1/2 cups all-purpose flour
1 cup sugar
1 egg
1 teaspoon baking powder
1 teaspoon vanilla
1/2 teaspoon peppermint extract
12 ounces semi-sweet chocolate chips
1/2 butter
holiday colored sprinkles

Preheat oven to 375 degrees. Beat 1 1/2 cups butter on medium or high speed for 30 seconds. Add 1 cup of the flour, the sugar, egg, baking powder, vanilla and peppermint extract. Beat until thoroughly combined. Beat in remaining flour.

Using a cookie press, press dough onto an ungreased cookie sheet. Bake for 8 minutes and cool cookies on a wire rack.

Melt chocolate chips and remaining 1/2 cup of butter in microwave stirring often. Dip each cookie into the chocolate about 1/3 of the way. Immediately dip the choclate covered part of cookie into the sprinkles. Place cookies back on wire rack until choclate has hardened.
