Dinner Duo: Grilled Shrimp Kabobs & Cajun Shrimp Pasta

Ingredients

  • 3 tablespoons fresh lime juice
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon hot sauce
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 4 pounds shrimp, peeled and deveined

    Combine first 7 ingredients in a small bowl. Thread the shrimp on skewers and lay them flat in a shallow dish. Pour half the marinade over the shrimp and place in refrigerator for about 1 hour, turning once. Set aside remaining marinade. Grill shrimp kabobs on an uncovered grill over medium heat for 10 minutes, turning frequently until pink.

    Baste one or two times with remaining marinade.

    Peach Salsa

    Ingredients

  • 1 green bell pepper, diced
  • 1 onion, diced
  • 2 peaches, peeled and diced
  • 3 tablespoons fresh lime juice
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon minced jalapeno
  • 1 teaspoon ground ginger
  • 1 clove garlic, minced

    Mix all ingredients and season to taste with salt and pepper. Let sit one hour in refrigerator before serving.

    Meal 2: Cajun Shrimp Pasta

    Ingredients

  • 1 cup chopped onion
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon hot sauce
  • 2 cans (15 ounce) diced tomatoes, drained
  • 2 teaspoons sugar
  • 3 cups chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 pound thick pasta noodles (such as linguini)
  • 1 pound leftover shrimp

    Saute onion in olive oil for 4 minutes, or until translucent. Add garlic, thyme, black pepper, and cayenne pepper and stir well. Add Worcestershire sauce, hot sauce, tomatoes, sugar, broth, and cheese. Simmer over low heat for approximately 30 minutes, stirring frequently until a thick sauce forms.

    Meanwhile, bring a large pot of water to a boil and cook pasta according to package directions. Just before serving, add shrimp to sauce to warm through. Pour sauce over pasta, and serve immediately.
