Oysters and Fennel

6 West Coast Oysters, shucked
½ bulb Fennel split in half, shaved
1/4 Carrot, grated
Juice from 1/2 Lime
1t. Toasted fennel seeds, crushed
1 T. Toasted Pine nuts, rough chop
¼ t. Mustard
1 t. Minus 8 Vinegar
Salt & Pepper to Taste

Mix all ingredients and top oysters.
