Chocolate Caramel Cake With Vanilla Gelato

9 oz Semi sweet Chocolate
9 oz Butter
5 Eggs
5 Egg yolks
4 oz Sugar
2oz All Purpose Flour
1Dozen Caramel Candies

Method:

Melt Chocolate and butter together over double boiler.

Whip Eggs and yolks with sugar till ribbon forms. Combine Melted Chocolate, and butter with egg Mixture. Fold flour till the batter is smooth. Spoon mixture half way into 12 sprayed 4-oz aluminum Tins. Place 1 or 2 Caramel candies in center. Place more Chocolate Batter over Caramel. Bake at 350 degrees 8-10 minutes.

Vanilla Gelato

2 pints Milk
8 Egg yolks
4 oz Sugar
1 Tsp Vanilla

Method

Heat Milk and Vanilla to a Scald, Whip Egg yolks with sugar, Temper into Milk, Cook till slightly thickens. Strain mixture, cool.

Process in Ice cream Machine.
