- 9 pounds sweet potatoes
- 3/4 cup real maple syrup
- 3 teaspoons lemon zest
- Juice of 1 1/2 lemons
- 6 tablespoons bourbon
- 3/4 teaspoon salt
Roast the potatoes in a 375 degree oven for 1 - 1 1/2 hours or until they are very soft and caramelized. Let cool a bit and then peel the skin away. Using the stand mixer, place in a large mixing bowl and mix with a paddle attachment. Add the remaining ingredients and mix until smooth.
