- 6 whole Mediterranean Langoustines (scampi)
- 2tbls. Extra Virgin Olive Oil
- 4 tsp. Italian Parsley, chopped
- to taste Salt
Preheat oven to 450 degrees. Cut scampi in half lengthwise. Remove intestinal tract from tail and remove stomach located in the head near the eyes. Arrange the scampi cut side up on a baking sheet and season with salt and drizzle with half of the olive oil. Bake for approximately five minutes or until scampi are just cooked. Serve immediately topped with parsley and remaining olive oil.
