Beef Strip Loin With a Porcini Rub

Roasts can be prepared as simple as rubbing them with olive oil, kosher salt and cracked pepper but Chef Chris likes to put a rub on a roast and let it sit overnight for fragrant, rich flavor.

serves 10-12 as a main entree

4 Tablespoons sugar
2 Tablespoon kosher salt
10 cloves of garlic, minced
2 Tablespoon chili flakes
2 Tablespoon ground black pepper
1/2 cup dried porcini mushrooms, ground finely in a food processor or grinder
1/2 cup extra virgin olive oil
1 4-5 lb beef strip loin (also called top loin of beef)

Mix all ingredients, except beef roast, in a bowl. Pat the rub evenly around the roast. Wrap the roast tightly in 2 layers of plastic wrap and refrigerate overnight. Bring to room temperature, about 1 hour, before searing. Follow the above basic techniques for roasting.
