This is not your same old Mexican melted cheese! Queso Fundido is a staple at many restaurants, but at Fat Rosie's in St. Charles, diners get to choose from three interesting and mouthwatering takes on the Mexican-style fondue.
This new taco and tequila bar from Chicago powerhouse restaurateurs Scott Harris (Francesca's Family of Restaurants) and Jimmy Bannos (The Purple Pig and Heaven on Seven) starts all of these appetizers with a base of rich melted Chihuahua and Monterrey cheeses. Then just a few flavorful ingredients are added to create delicious dishes, all with their own flair. Options include:
Norteno: Pork chorizo, roasted poblano peppers, onion, garlic, oregano
Del Mar: Grilled shrimp with chipotle glaze, grilled pineapple, red onion
Vegetariano: Grilled mushrooms, grilled red onion, roasted red peppers
