- 8 cups cooked sweet potatoes
- 1/2 cup of heavy cream
- 1/2 cup pure maple syrup
- 1/2 cup light brown sugar packed
- 5 tbsp bourbon
- 1/2 lb butter, at room temperature
- 1 1/2 tsp salt
- 1 tsp black pepper
- 1 tsp vanilla extract
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
Combine all ingredients except bourbon and saucepot over medium heat.
Place the bourbon in a small saucepan and place over high heat. Let it come just to the boil and then tilt the pan slightly towards you to set it aflame. Add bourbon to potato mixture and mix well.
