Salad can be prepared up to 1 day ahead, without the lettuce. Add lettuce just before making wraps.
2 cups chopped romaine lettuce
1 (12 ounce) can Jewel® solid white albacore tuna in water, drained
1 medium tomato, seeded and chopped
1/4 cup chopped red onion
1/4 cup chopped cucumber
1/4 cup chopped red bell peppers
1/4 cup pitted Kalamata olives, cut in half
1/4 cup crumbled feta cheese
2 tablespoons Jewel® extra virgin olive oil
1 tablespoon Jewel® lemon juice
1 1/2 teaspoons Jewel® Dijon mustard
1/2 teaspoon Jewel® salt
1/8 teaspoon Jewel® black pepper
6 large spinach tortillas
1. In large mixing bowl, combine lettuce, tuna, tomatoes, onion, cucumbers, peppers, olives and feta cheese until mixed together.
2. In small bowl, whisk oil, lemon juice, mustard, salt and pepper until well combined. Toss with salad.
3. Divide salad between 6 tortillas and roll into wraps. Place 2 decorative toothpicks into each wrap and cut diagonally in half to serve.
