Strawberry Rhubarb Syrup Base
2 cups rhubarb, chopped
4 cups strawberries, stems removed and chopped
2 cups sugar
2 cups water
In a pot over medium heat, add sugar and water and bring to a simmer until sugar is dissolved. Add strawberries and rhubarb, and cook over a simmer for 15 minutes. Strain, cool and reserve liquid.
1 sprig mint, per glass
8 oz. sparkling water
Add ice and mint to glass, pour in 2 oz. Strawberry Rhubarb syrup and then add sparkling water and stir.
