Shrimp Peppers

Executive Chef Cary Taylor of The Southern restaurant shares this recipe.

A. Red Bell Peppers, Julienne 22# case
B. Red onions, julienne 8 each
C. Garlic, cloves sliced one-half head
D. Extra Virgin Olive Oil 1 cup
E. Smoked Paprika one-quarter cup
F. Salt Taste
G. Pepper Taste

1. Toss Peppers, onions and garlic in extra virgin oil to completely coat
2. Add seasonings and stir to fully incorporate
3. In a large pot with a lid, bring the pepper mixture to a simmer over medium-low heat, making sure to stir every 10 minutes
4. Cook until liquid releases from the vegetables and a rich broth covers them
5. Check for seasoning and cool down
