Tasso Gravy

Ingredients:
A. Butter, melted one-quarter cup
B. Tasso Ham, small dice one-half cup
C. Flour one-half cup
D. Stock 3 cups
E. Rosemary 1 Tblsp
F. Parsley 1 Tbslp
G. Salt and Pepper taste
H. Heavy Cream 1 cup

1. Cook melted butter and flour over medium heat until light brown and cooked through
2. Add ham and continue to cook until fragrant
3. Add remaining ingredients and cook until thick. STIR CONSTANTLY
4. Keep gravy in a sixth pan and wrap tightly. Place in a water bath and store over medium low heat.
