Carnivale recipes, Farm to Table dinners

This summer, the River West neighborhood restaurant Carnivale is offering up some delicious dishes that feature seasonal ingredients from local farms.

Carnivale is mixing that homegrown taste with their own authentic Nuevo Latino Cuisine. All this week Chef David Dworshak is using fresh vegetables from The Mint Creek Farm in Central Illinois for his twist on the authentic Mexican dish called "Birria".

Chicagoans are invited to experience the best of the Midwest one week each month through September, as Executive Chef David Dworshak showcases seasonal ingredients from his favorite local farms.

The June Farm to Table menu will feature ingredients from Seedling Fruit in South Haven, Michigan and 100 percent grass-fed Lamb from Mint Creek Farm in Stelle, Illinois (detailed information on each farm can be found below).

South central Michigan is a great place to grow fruit and that's where Peter Klein tends his orchards on the 81 acres that make up Seedling Farm. The farm produces an abundance of tree fruits. Peter grows almost 80 varieties of fruit on over 5000 trees; apples, peaches, pears, plums, nectarines, cherries, apricots?and this year they are planting pluots and apriums. Seedling Farm uses an integrated pest management system to grow the best quality fruits with the least amount of impact on the environment. They are committed to farming sustainably to ensure the land remains viable, to preserve groundwater and to provide customers with the healthiest, tastiest fruit. About Mint Creek Farm
Mint Creek Farm is owned and operated by Harry and Gwen Carr, with the help of their children, Jonathan and Raya. The Carrs started with 50 acres in 1992 and have grown to 220 acres. The sheep were originally part of their plan to enliven and enrich the soil that had been so depleted by modern mainstream agricultural practices.
