Insalata Penne A la Caprese

Recipe from Chef Cristiano Bassani of Bapi Ristorante.

Boil 1 lb. Penne pasta for 12-13 minutes (al dente), let sit a few minutes, or chill in the fridge

Cut up 1 lb. sweet cherry tomatoes (to release flavors)

Cut up half cup fresh mozzarella cheese balls

Half cup Extra Virgin olive oil

Mix all together

Add salt & pepper to taste, then basil

Serve at room temperature

Serves 4
