Cook quinoa just like you would cook rice, then fluff it with a fork and add a small handful (about 1/4 cup) of pumpkin or sunflower seeds, a chopped carrot or other root vegetable, and a sprinkle of fresh parsley or cilantro if you have some around.
Dress it with 1 tablespoon olive oil, 1 tablespoon vinegar, and a dash of salt and pepper to taste.
