Orange Macademia French Toast

Chef Joe Pankrath from Renaissance Chicago Downtown Hotel & Bar Novo was in our ABC7 studio kitchen to show us how to make a decadent Orange Macadamia French Toast.

Orange Macadamia French Toast

Components:
3 One-Inch Thick Slices Brioche Bread
Batter
Macadamia crust
Rum Syrup

Batter:
one-quarter cup Heavy Cream
3 Large Eggs
1 tbsp Ground Cinnamon
1 tsp Vanilla Extract
2 tbsp Honey

Directions:
Whisk all ingredients together.

Crust:
one-half cup Macadamia Nuts, Crushed
Zest of 2 Oranges
Pinch Salt

Directions:
Toss ingredients together.

Syrup:
1 qt Myers Jamaican Rum, Reserve 2 oz As Well
1 qt Maple Syrup
1 tbsp Vanilla Extract

Directions:
Reduce 1 qt rum to 1 cup in a pot on medium heat.
Add syrup, and simmer for 10 minutes.
Remove from heat, and add 2 oz rum and vanilla.
Reserve.

Method:
In a nonstick pan, heat 1 tbsp butter on medium heat. Dip bread in the batter, coating both sides. Press one side of the soaked bread with the crust, and cook in the pan crust side down. Cook all sides thoroughly. Pour desired amount of syrup over French toast. Garnish.
