Mint Hot Chocolate

This recipe provided by Chef Christopher Polo from Swissotel Chicago.

2 qts Heavy Cream
1 qt Half and Half
4 oz Crème de Menthe
4 oz Crème de Cacao
4 oz Sugar
2 lbs Felchlin Chocolate Chunks

1. Heat heavy cream, half and half, Crème de Menthe, Crème de Cacao and sugar until hot.
2. Add in chocolate, and stir until melted.
3. Blend with a hand blender, and pass through a chinois.
