Cheater Tip: use pre-packaged chocolate pudding mix
- 6 oz. bittersweet chocolate, coarsely chopped
- 3 cups heavy cream, well chilled
- 3 large egg whites
- 2 T. and 1 T. granulated sugar
- 1 T. pure vanilla extract
- Shaved bittersweet chocolate, for garnish
- Fresh raspberries, optional
Place chocolate in a microwave safe bowl and microwave, stirring every 30 seconds, until melted. Place in refrigerator while whipping cream.
Whip cream, vanilla and 2 T. sugar until soft peaks form, reserve approximately 1/3 of the whipped cream for topping.
In separate bowl, with clean beaters, whip egg whites until soft peaks form. Gradually add 1 T. sugar and continue whipping until firm.
First fold melted chocolate into egg whites until almost incorporated, then fold in 2/3 of the sweetened whipped cream.
Place a whole raspberry (if using) on bottom of martini glass. Spoon chocolate mousse into glass until approximately 2/3 full, top with whipped cream and garnish with chocolate shavings.
NOTE: To shave chocolate use a vegetable peeler and shave ribbons from the side of a chocolate bar onto a plate --- place shavings in freezer for 1-2 minutes to set.
