Chicken Skewers with Walnut Pesto

These grilled skewers are great for easy entertaining -- and pair well with both Apothic Red and White. These bold blends are robust enough to stand up to strong flavors like garlic or pesto and yet still versatile -- try pairing them with Italian or even Greek food.



2 cups of basil, packed
1/2 cup chopped walnuts
2 cloves of garlic, minced
1/4 cup walnut oil
1/4 cup Parmesan, grated
2 tablespoons of olive oil

Chicken skewers

1 1/2 lbs chicken breast, cubed
12 cherry tomatoes
1 Vidalia onion, quartered
Sea salt
Freshly cracked black pepper

Wooden skewers
Grill pan


Making the pesto: In the processor, pulse basil, walnuts, garlic, and walnut oil until combined. Add Parmesan and olive oil, and pulse again.

Making the chicken skewers: Soak the wooden skewers in water for 1 hour. Onto each skewer, alternately thread chicken, cherry tomatoes and onions; repeat until skewer is full.

Drizzle olive oil over the prepared skewers, and season with sea salt and cracked black pepper.

Grill for around 5 minutes, turning regularly, until cooked. Slather with walnut pesto.

Chocolate Mousse

1 cup whipping cream
2 cups good-quality dark chocolate, chopped
4 large eggs, separated
1/2 cup raw sugar, pulverized (or fine white sugar)
Pinch of cayenne
Sea salt

2 medium bowls
Large shot glasses


Making the chocolate mousse: In a small pot heat cream on medium heat. Once it starts to steam, take off heat and add chocolate. Whisk until melted. Let cool. Carefully add cooled chocolate cream to the bowl containing the four egg yolks, spooning in 1 tablespoon at a time while mixing continuously.

Making the meringue: Add sugar to the bowl containing the four egg whites and beat until stiff peaks form. Fold into cooled chocolate cream mixture. Cover and refrigerate for 1 hour.

Place some chocolate mousse in a piping bag and pipe into shooter glasses. Garnish with sea salt and cayenne.
