Peanut Butter Month: Peanutty Broccoli, Peanut Butter Date Balls

November is National Peanut Butter Month, and even though it's winding down, peanut butter can be a great ingredient in recipes year-round. Ali Baig, Registered Dietician at Life Time Fitness Warrenville, came into our ABC7 studio kitchen to show us a few ways to go beyond the PB&J sandwich.

Ali's Recipes: Peanutty Broccoli
1/4 cup creamy or crunchy peanut butter
2 tablespoons hot water
1 tablespoon light soy sauce
1 tablespoon lime juice
1 1/2 teaspoons dark sesame oil
1/4 teaspoon red pepper flakes
2 tablespoons vegetable oil
3 cups fresh broccoli florets
1/2 cup chopped red bell pepper
1/4 cup sliced green onions
1 clove garlic, crushed

1. Combine peanut butter, hot water, lime juice, soy sauce, sesame oil and red pepper flakes until well blended. Set aside.
2. Heat vegetable oil in large skillet over medium-high heat. Add broccoli, red pepper, green onions and garlic. Stir-fry 3 - 4 minutes until vegetables are tendercrisp.
3. Remove from heat and stir in peanut butter mixture.
4. Serve warm or at room temperature.

Peanut Butter Date Balls
12 dates, chopped
1/3 cup oatmeal 2 1/2 tablespoons peanut butter

1. Combine the 3 ingredients
2. Shape into balls
3. Refrigerate until firm or eat immediately!
