Let's Dish: Goat Cheese Vinaigrette

The host of the Live Well Network show, Let's Dish, Chris Koetke has a wonderful all-purpose recipe that can be flavored in many different ways, it is goat cheese vinaigrette. Adding fresh herbs or more black pepper to the dressing will change the character. It is great drizzled across roasted root vegetables, grilled mushrooms, or of course a salad!

Yield: 6 salad portions

4 oz fresh goat cheese
2 Tablespoons Champagne or white wine vinegar
2 Tablespoons flavorful extra virgin olive oil
1/8 teaspoon salt
1/4 teaspoon ground black pepper
1 Tablespoon water (more may be necessary depending on how dry the goat cheese is)

1. Place all ingredients in blender and process until smooth. Keep refrigerated until needed.
