Grilled Dry-Aged Ribeye

Recipe from David Burke of David Burke's Primehouse at The James Hotel

Cooking instructions:

1. Season beef with salt and pepper, place on grill on hot side. When browned turn over and brown the other side. Move to cooler side of the grill and slowly bring to internal desired temperature. Brush with beef luv as the steak is cooking.

2. Remove and allow to rest for 5 minutes before serving.

3. Cut peaches in half, remove pit, season with salt and pepper. Spray with veg spray. Place cut side on grill. When browned, flip over and continue to cook on all sides.

4. Remove from grill and dice peaches, combine with the steak sauce mashing them a little. Add thyme and serve with the steak.
