On Friday, August 23, 2013, the Junior League of Chicago holds its Summer Soiree.

This year's theme is Moonlights & Magnolia. Proceeds benefit the Junior League of Chicago mission. The JLC is a metropolitan organization of women committed to promoting voluntarism, developing the potential of women and improving the community though effective action and leadership of trained volunteers. Anne Forman, Fundraising Director with the Junior League of Chicago (www.jlchicago.org), and Chef Shawn Doolin of Entertaining Company came into our ABC7 studio to tell us about the event and show us a tasty recipe for Fried Green Tomato Sliders

Chef Shawn Doolin's Recipe: Fried Green Tomato Sliders

2 Green tomatoes
1 Cup Buttermilk
1 large egg
1/2 cup cornmeal
1/2 cup flour
1 cup oil for frying
1 cup mayonnaise
3 tsp siracha
1 ½ tsp fresh chopped garlic
1 tsp Cajun red seasoning salt
1 tsp fresh lemon juice
1 tablespoon fresh chopped parsley
1 cup fresh arugula
Pretzel rolls


Sliced tomatoes into 6 slices each. Season both sides of the tomatoes with salt and black pepper. Combine Buttermilk and the eggs in a bowl. In a separate bowl combine cornmeal and flour. Dredge the tomato slices in the buttermilk and egg mixture. Place directly into the flour and cornmeal mixture to coat the tomato.

Heat the oil to 300 degrees. When the oil is ready, fry the tomatoes to golden brown on both sides.

In a pan sautéed the garlic with 2 T of the olive oil. Add red seasoning salt and cool. Combine the mayonnaise, siracha, lemon juice, fresh parsley and add garlic oil seasoning mix. Toast the pretzel buns, add siracha aoli on both sides with the fried green tomato and fresh arugula.
