On May 17, the City of Chicago is offering advice at its Small Business Expo for the Latino community. If you wonder how that can help you, just ask Omar Solis. He got advice at a past expo and now owns his own restaurant, Nana. Omar came into our ABC 7 Eyewitness News studio with his mother, Maria, and Roxanne Nava, Chief Small Business Officer for the City of Chicago, to tell us about the available help.

Omar's Recipe: Avocado Fries

Ingredients:

For the Avocado Fries:

1 firm avocado

1/2 cup flour

1 lime, juiced

1 tablespoon hot sauce

1/4 cup water

1/2 cup panko crumbs

3 cups Canola oil

For the Chiptle Aioli Sauce:

1/2 cup mayonnaise

1/4 bunch fresh cilantro, chopped

1/2 lime, juiced

Salt to taste

Hot sauce to taste; optional

Preparation:

Slice the avocado in half, remove the core, and cut into five equal portions. Place the pieces on a plate and freeze while preparing the rest of the ingredients. Once avocados are frozen, toss them in a bowl with the flour. Remove them from the flour and set aside.

In a separate bowl, mix together the lime juice, hot sauce, water and the flour you just tossed the avocados in. Coat the avocados in the batter. Transfer them to a bowl of panko and toss. Pop them back in the freezer until you are ready to fry.

Heat the oil in a small pot and fry the avocados directly out of the freezer. Once golden brown, us a slotted spoon to transfer them to a paper towel. Combine mayonnaise, fresh cilantro , and lime juice in a mixing bowl.

Add a pinch of salt to taste and a dash or two of hot sauce for heat (optional).
