Let's Dish: Ricotta Fruit Pie
Many people think of ricotta as a savory ingredient, but it also makes a great fruit pie.

Many people think of ricotta as a savory ingredient, but it also makes a great fruit pie. Chris Koetke of the Live Well Network show Let's Dish is making a sweet treat that takes advantage of the most beautiful, freshest fruit of the summer. Recipe for ricotta fruit pie

Difficulty: Easy

Prep time: 25 minutes

Cook time: 45 minutes

Serves: 8-10 (2 tarts)

Ingredients:

16 oz. ricotta

3/4 cup cream

1 1/4 cups sugar

4 eggs

Zest of 1 orange

2 tablespoons lemon juice

Colorful assorted fruit (i.e. grapes, sliced mango, sliced strawberries, blueberries, raspberries, etc.)

2 store-bought graham cracker crusts

Method:

1. Combine first six ingredients in a bowl and mix well.

2. Pour the ricotta mixture into the graham cracker shells.

3. Bake in a 350 degree oven for about 45 minutes, or until the center has solidified.

4. Remove from oven and let cool. When cool, place in the refrigerator until needed.

5. When ready to serve, arrange fresh fruit on top of the tart.
