CHICAGO (WLS) -- The typically cold weather of January is the perfect time to celebrate National Soup Month. Almost every country around the world has their own special recipe. Both nourishing and diverse, soup can offer a warm comfort of home or help overcome illnesses.
Chicago restaurant Chez Moi is offering a unique take on National Soup Month.
Through Jan.31, the restaurant will offer a Soup Flight, featuring four different soups, for just $9.95 per person.
Chef and Owner of Chez Moi, Dominique Tougne visited ABC7's studios to give a taste.

RECIPE:
Cauliflower Cream with Cumin
Serves 4
Ingredients:
1 small cauliflower
1 quart of water
1/4 Spanish onion diced
1/2 tsp. cumin powder
1/2 oz butter
1/2 cup heavy cream
Salt and pepper
Preparation:
In a sauce pot, saut the diced onion without color, the add the cauliflower and the water. Cook until very soft.
Discard 1/2 of the water, then with a hand mixer puree the cauliflower. Over low to medium heat, add the butter until completely combined with the cauliflower. Add the cream. Blend again with hand mixer to get a smooth consistency. Add the seasoning and the cumin powder.
Serve very hot with brioche croutons or the garnish of your choice.
