KFC Flavor Explosion Chicken Salad

By Kevin Pang

From Lucky Peach Issue #2

Cooking isn't supposed to be an exact science. It's improvised jazz, really - the correct recipe is almost always whatever feels right. So apologies for the inexact measurements, but do know this is an extremely forgiving recipe. And it'll be the best chicken salad you've ever tasted.

Leftover KFC fried chicken (preferably original recipe, dark meat)

2 scallion stalks

1 Granny Smith apple

Mayonnaise (preferably Kewpie, a Japanese brand)

Sriracha hot sauce

1 lime

*** Roughly chop up the cold leftover KFC Chicken, skin and all. Or tear it apart with your hands. Whatever you like!

*** Dice up the apple, chop the scallions. Add to bowl of chicken.

*** Add a socially acceptable amount of mayonnaise to the bowl of dry ingredients. Add sriracha or whatever hot sauce, depending on your spicy tolerance. Squeeze lime over everything for added zing!
