Avli shares spicy Greek feta recipe on Cooking up a Storm

CHICAGO (WLS) -- ABC7 Chicago meteorologist Tracy Butler was Cooking up a Storm with a north suburban chef Thursday.

The restaurant is so popular it's expanding into a new space.



Avli Winnetka will open the doors on Monday to a bigger restaurant and vinyl-inspired bar and lounge.

Butler made a spicy Greek feta dip with Avli's executive chef Jorge Angelo Thursday.

Green Tirokafteri Recipe


4-6 servings

Ingredients

- 2 cups crumbled feta (from 16 oz.)
- 1 cup ricotta cheese (from 8 oz.)
- 1 1/2 tablespoons extra-virgin olive oil
- 2 serrano peppers, roasted and seeded
- 1/4 cup fresh dill
- 1/4 cup fresh parsley
- 1/4 cup fresh oregano
- 1 roasted garlic clove
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander

Instructions

1. Make the Green Sauce: In a blender or food processor, combine the roasted serrano peppers, roasted garlic, dill, parsley, oregano, olive oil, cumin, and coriander. Blend until smooth and vibrant green.





2. Fold Into Cheeses: In a mixing bowl, combine the crumbled feta and ricotta. Add the green sauce and fold gently until fully incorporated and evenly marbled.

3. Chill & Serve: Refrigerate for at least 30 minutes to allow flavors to meld. Serve with warm pita, crackers, or fresh vegetables.
