Cooking up a Storm: Maplewood Brewery opens new location in west suburbs

CHICAGO (WLS) -- Beer is flowing in Glen Ellyn by a booming brand from Chicago.



Maplewood Public House opened in the downtown area of the west suburb.

They're known for their beer, and they hope to make a name for themselves with the food.

Executive Chef Joanna Janczurewicz and Head Distiller, Creative Director Adam Smith joined ABC7 to share their recipe for a Polish-style pulled pork sandwich, known as Maczanka Krakowska.

Pulled pork shoulder



-5lbs pork shoulder, cut into big chunks

-1tbsp salt

-1tsp black pepper



-4 tbsp neutral oil

-2 onions, roughly chopped

-2 carrots, roughly chopped

-4 cloves garlic, whole

-1 tbsp peppercorns



-1 tsp whole allspice

-2 bayleafs

-1 tbsp marjoram

-1 qts Pulaski Pils

-1 qts stock or water/enough to cover



-1tbsp salt

-1tsp black pepper

Preheat oven to 300F. Coat pork chunks in salt and pepper. Preheat a heavy bottom pan on medium heat. Add oil to hot pan and add pork chunks a few at a time. Do not overcrowd the pan. Sear pork chunks on each side, and set aside into a deep roasting pan. After all the meat is seared, add the beer to the pan to deglaze, scraping all the brown bits off the pan. Pour on top of the pork. Add remaining vegetables, spices and stock to the roasting pan. Add enough liquid to cover the pork chunks and vegetables 2/3 of the way. Cover tightly with foil/lid and let braise for 2-2.5 hours, checking about half way through and flipping the meat in the liquid. Pork is ready when it is tender and soft, easy to shred.

Let the pork cool slightly and remove from the liquid. Save the liquid to make your gravy.

Pork Gravy



-Strain the remaining liquid and discard any remaining solids. Add cooking liquid to a pot and reduce by 1/3. Thicken with cornstarch slurry. Season to taste.

Apple & Kohlrabi Slaw



-head green cabbage, shredded

-1 kohlrabi, cut into sticks or shredded

-Half of a green apple, cut into sticks or shredded

-1 cup mayonnaise

- 3 tbsp whole grain mustard

-Salt and pepper to taste

Mix all ingredients together and season to taste.

Sandwich assembly



-Sliced white onion
-Dill pickle slices Toast a ciabatta or hard roll
-Apple Kohlrabi Slaw
-Pork
-Gravy
-Slaw

Toast ciabatta on both sides. On the bottom bun, layer sliced onions and pickle slices. Add hot pork and gravy on top, then slaw on top of that. Cover with bun, slice in half and enjoy!
