Recipe for Grilled Curried Shrimp

Difficulty: Moderate

Prep time: 25 minutes (plus 3 hours marinating time)

Cook time: 10 minutes (depending on the size of the shrimp)

Serves: 6 as an appetizer, 3 as a main course

Ingredients:

1 lbs. large, raw shrimp, tail on, shelled, and deveined

cup plain Greek yogurt

1 Tablespoons lemon juice

2 teaspoons paprika

2 cloves garlic, finely minced

1 Tablespoon finely grated fresh ginger

teaspoon ground cumin

teaspoon ground black pepper

teaspoon salt

-1 Serrano chile, finely minced (1 whole Serrano will really make it spicy!)

teaspoon turmeric

bunch cilantro, minced

1/8 teaspoon ground coriander

Method:

  • 1. In a bowl, combine all ingredients except the shrimp.

  • 2. Add shrimp to the bowl and stir to coat well. Place in the refrigerator for several hours to let the flavors marinade.

  • 3. Place the shrimp on a hot grill and cook for only a few minutes per side, being sure not to overcook them.
