Recipe for grilled pineapple salsa
Difficulty: Easy
Prep time: 15 minutes
Cook time: 10 minutes
Serves: 3 cups
Ingredients:
12 oz. pineapple (about 1/2 of a fresh pineapple)
1 tablespoon jalapeno chili (about 1/2 jalapeno chili)
1 medium red onion, peeled, and cut into 1/4 of an inch slices
1 teaspoon lime zest
1 tablespoon lime juice
1 cup diced ripe tomatoes
3/4 cup roughly chopped cilantro leaves
2 tablespoons orange juice
1 teaspoon salt
1 tablespoon olive oil
Preparation:
1. On a hot grill, grill pineapple, jalapeno and red onion until lightly charred and softened.
2. Remove from the grill and let cool. Dice pineapple, jalapeno and red onion and place in a mixing bowl.
3. Add remaining ingredients and stir until combined. It can be served immediately or stored in the refrigerator for several days.
